Method

  1. Preheat oven to 200C.
  2. Season the steaks with oil, salt and pepper, set aside.
  3. Put oil, potatoes and seasoning in a baking tray and roast for 25 mins.
  4. In a hot frying pan add oil then cook the bacon, garlic and cabbage. Add white wine and reduce by half.
  5. Turn off the heat and stir in crème fraîche until combined.
  6. Season to taste and serve with grated parmesan.
  7. Heat a heavy bottom frying pan and when hot brown the venison on each side and cook to your taste.
  8. Leave to rest for 3-4 mins and serve onto warm plates with the potatoes and cabbage.
