1. Add the juice and rind of 1 lime and chopped ginger to the diced meat. Mix well and leave to marinade
  2. Heat the oil in a pan over a medium to high heat and cook the meat until brown. Once cooked remove and place on a plate
  3. Add the pepper, mange tout, vegetables and beansprouts to the pan. Add soy sauce to taste
  4. Return the meat to the pan and add in the soft noodles and spring onions. Add a squeeze of lime juice before serving
